Flank Steak With Corn Relish
|Canned black beans||7 1⁄2 Ounce, rinsed and drained (1/2 Of A 15 Ounce Can)|
|Corn relish||2⁄3 Cup (10.67 tbs)|
|Halved sliced radishes||1⁄4 Cup (4 tbs)|
|Fresh jalapeno pepper||1 Small, seeded and finely chopped|
|Lime juice||2 Teaspoon|
|Ground cumin||1⁄4 Teaspoon|
|Beef flank steak||12 Ounce|
|Black pepper||1 Dash|
For relish, in a small bowl combine black beans, corn relish, radishes, jalapefio .pepper, lime juice, and cumin.
Cover and chill for at least 30 minutes or for up to 4 hours.
Trim fat from steak.
Score steak on both sides by making shallow diagonal cuts at 1-inch intervals in a diamond pattern.
Lightly sprinkle with the salt and black pepper.
Place steak on the rack of an uncovered grill directly over medium coals.
Grill for 17 to 21 minutes for medium (160Â°F), turning once.
