Grilled Steak Marinated In Citrus
|Kosher salt||1 Teaspoon (Or More To Taste)|
|Boneless sirloin steak||2 Pound, not more than 1/2-inch thick, trimmed of fat|
|Beer||3⁄4 Cup (12 tbs) (Preferably Dark And Toasty, Such As Negra Modelo)|
|Ground black pepper||To Taste|
|Red onion||1 Medium, finely chopped|
In a large glass or ceramic baking dish, combine the juices, beer, onion, and salt.
Add the steaks, turn to coat both sides, cover, and let marinate in the refrigerator for 30 minutes.
Meanwhile, heat a grill to very hot.
Lift the steaks out of the marinade and grill just until both sides are well browned, 3 to 4 minutes total.
Do not overcook; remember that the steaks are very thin.
Season with salt and pepper and serve with lime wedges.
