Orange Pepper Steaks
|Coarsely ground black pepper||2 Teaspoon|
|Beef tenderloin steak||4 , cut 1 inch thick|
|Orange marmalade||1⁄2 Cup (8 tbs)|
|Cider vinegar||4 Teaspoon|
|Ground ginger||1⁄2 Teaspoon|
Press pepper evenly into both sides of beef steaks.
Place steaks on rack in broiler pan 2 to 3 inches from heat source.
Combine marmalade, vinegar and ginger in small bowl.
Brush tops of steaks with 1/2 of marmalade mixture.
Broil steaks 10 to 15 minutes for rare (140°F) to medium (160°F), turning once and brushing with remaining marmalade mixture.
