Squid Athenian Style
|Squid||3 Pound, frozen|
|Onions||1 Cup (16 tbs), chopped|
|Garlic||1 Clove (5 gm), chopped|
|Olive oil||3 Tablespoon|
|Chopped canned tomatoes||2 1⁄2 Cup (40 tbs)|
|Fresh parsley||1⁄2 Cup (8 tbs), chopped|
|Dried oregano||3⁄4 Teaspoon, crumbled|
|White wine||1⁄4 Cup (4 tbs)|
Thaw squid; remove tentacles.
Remove and discard head, chitinous pen, and viscera.
Wash mantle well; cut into pieces.
Saute onions and garlic in oil until lightly browned.
Add tomatoes, parsley, salt, pepper, oregano, wine, and squid.
Cover; simmer 1 hour, until squid is tender.
