Squid Rings With Rotini
|Squid tubes||8 Ounce|
|Olive oil||1 Tablespoon|
|Garlic||2 Clove (10 gm)|
|Squash||1 Small, sliced into thin wheels (Golden Colored)|
|Ripe tomato||1 Large, dried|
|Oregano sprigs/1 teaspoon dried oregano||2 , chopped (Fresh)|
|Fresh vegetable rotini/4 ounces dry vegetable rotini||8 Ounce|
|Shredded parmesan cheese||1 Tablespoon|
Heat water for rotini.
Rinse squid tubes well, inside and out Drain and pat dry.
Slice into 1/2 inch rings; set aside.
In a frying pan, heat oil over medium heat.
Add whole garlic.
Cook until golden brown, then remove and discard.
As soon as pasta goes in boiling water, put squid rings in oil, stirring to coat Add squash and cook for 1 minute.
Add tomato with juice and oregano.
Cook quickly (about 1 minute), stirring often, until hot through.
When pasta is done, drain well and serve in bowk Pour sauce over pasta, sprinkle on cheese, and serve.
