Raisin-Orange Acorn Squash
|Acorn squash||1 Medium|
|Raisins||1⁄4 Cup (4 tbs)|
|Orange peel||1⁄2 Teaspoon, grated|
|Orange juice||1⁄4 Cup (4 tbs)|
|Packed brown sugar||2 Tablespoon|
Prick squash in several places with fork.
Micro wave on paper plate 4 minutes; turn squash over.
Microwave until just tender, 3 to 5 minutes.
Let stand until cool enough to handle, about 15 minutes.
Cut squash lengthwise into halves; remove seeds and fibers.
Place squash halves cut sides up in serving dish.
Divide margarine, raisins, orange peel, orange juice, brown sugar and salt between squash halves.
Cover loosely and microwave orange juice mixture to boiling, 4 to 5 minutes.
