Apple Stuffed Acorn Squash
|Acorn squash||3 Medium|
|Ground cinnamon||1 Teaspoon|
|Grated lemon rind||1 Tablespoon|
|Lemon juice||1 Tablespoon|
|Honey||1⁄2 Cup (8 tbs)|
Cut squash in half lengthwise, and remove seeds.
Place cut side down in a shallow baking dish, and add 1/2 inch boiling water.
Bake, uncovered, at 375Â° for 35 minutes.
Turn cut side up; brush cut surfaces and cavities with 2 tablespoons butter.
Sprinkle lightly with salt and cinnamon.
Combine apples, lemon rind, lemon juice, 2 tablespoons butter, and honey; mix well and spoon into squash cavities.
Bake, uncovered, at 350Â° for 30 minutes.
