Carrots and Zucchini
|Carrots||4 Medium, scraped & cut into thin strips|
|Zucchini||2 Medium, cut into thin strips|
|Butter/Margarine||3 Tablespoon, melted|
|Freshly ground pepper||1⁄8 Teaspoon|
|Chopped fresh parsley||2 Tablespoon|
1) Take a steaming rack and arrange carrots on it. Place rack over boiling water and cover. Steam for about 1 1/2 minutes.
2) Add zucchini to the steaming rack and steam for another 3-4 minutes.
3) Transfer the steamed vegetables to a serving bowl. Add salt, butter, parsley and pepper. Toss gently and serve.
