Creamy Butternut Squash

This is a very rich and delicious side dish that will provide you with that bit of color that is always welcomed in a meal.
Ingredients
  Butternut squash 1 1⁄2 Pound, peeled, seeded, and cut into 1 inch chunks
  Unsalted butter 1⁄4 Cup (4 tbs)
  Heavy cream 1⁄4 Cup (4 tbs)
  Ground ginger 1⁄4 Teaspoon
Directions

1. Steam the chopped butternut squash for 20 minutes or until tender.
2. In a food processor or saucepan combine the steamed butternut squash, butter, heavy cream, and dried ginger.
3. If you have a food processor puree until smooth. If not use a potato masher and mash the ingredients together until they are smooth.
4. Add salt and pepper to taste.
