Country Good Baked Squash
|Small yellow squash||2 Pound|
|Instant minced onion||3 Tablespoon|
|Water||1⁄4 Cup (4 tbs)|
|Butter||1⁄4 Cup (4 tbs), melted|
|Milk||1⁄2 Cup (8 tbs)|
|Eggs||2 , beaten|
|Black pepper||1⁄4 Teaspoon|
|Parsley flakes||1 Teaspoon|
|Tarragon leaves||1⁄2 Teaspoon|
|Butter||2 Tablespoon, melted|
|Cracker crumbs||1⁄2 Cup (8 tbs)|
1 Wash the squash, but do not peel. Cut into small pieces.
2 In a pan, add cut squash along with onion and water.
3 Cook for about 10 minutes or until just tender, taking care not to overcook.
4 Drain the squash.
5 To 1 1/2 quart baking dish, transfer the mixture.
6 Pour the 1/4 cup melted butter over squash.
7 In a bowl, mix milk, eggs and seasonings and pour over the squash mixture.
8 In another bowl, mix the 2 tablespoons melted butter and cracker crumbs; sprinkle over top.
9 Bake in 450°Fahrenheit oven for 20 minutes.
10 Serve hot.
