Summer Squash With Sun Dried Tomatoes
|Sun-dried tomatoes||4 (Pumate)|
|Oil from dried tomatoes||2 Tablespoon|
|Fresh rosemary sprig||4|
1) Slice squash into round or diagonal pieces about 1/4 inch thick.
2) Slice tomatoes into thin strips.
3) In a skillet ,heat oil over high heat and fry squash slices on both sides until light brown,by turning frequently.
4) Now add the tomato strips, rosemary, and salt and pepper. Toss well to combine.
5) Serve immediately.
