Stuffed Acorn Squash I

Ingredients
  Cooked rice 1 1⁄2 Cup (24 tbs)
  Walnut 1⁄2 Cup (8 tbs), chopped
  Cracker crumbs 3⁄4 Cup (12 tbs)
  Onion 1 Medium, chopped fine
  Egg whites 2 , slightly beaten
  Sage 1⁄2 Teaspoon
  Parsley 2 Teaspoon, chopped
  Salt 1 Teaspoon
  Pepper To Taste
  Acorn squash 3 , cut in half and cleaned
Directions

GETTING READY
1) Preheat oven at 350°F.

MAKING
2) In a bowl, combine all ingredients except squash.
3) Fill the squash halves loosely with mixture.
4) In a baking pan, arrange the squash halves.
5) Place inside oven to bake for an hour or until squash is tender.

SERVING
6) Serve warm by sprinkling fresh parsley, if desired.
