|Fresh marrow||1⁄8 Cup (2 tbs)|
|Butter||2 Tablespoon, softened|
|Eggs||3 , beaten|
|Cracker crumbs||1⁄2 Cup (8 tbs)|
Beat marrow until creamy.
Beat in butter.
Stir in eggs, salt, and paprika.
Add enough cracker crumbs, about 1/2 cup, to make mixture stiff enough to shape into balls.
Roll mixture into small balls about the shape of a walnut.
Drop balls into simmering soup and simmer for 15 minutes, or until balls rise to surface of soup.
Use as soup garnish.
Makes about 4 servings.
