Baked Stuffed Acorn Squash
|Boiling water||1 Cup (16 tbs)|
|Cooked sausage meat||1⁄2 Pound|
|Onion||1 Medium, chopped|
|Soft bread crumbs||1 Cup (16 tbs)|
|Powdered nutmeg||1⁄4 Teaspoon|
1. Start oven, set at 400° F., Moderately Hot. Have a shallow baking pan ready.
2. Wash the squash, cut in halves lengthwise, remove seeds and fibers. Place in a large steaming kettle, cut side down, add 1/2 cup boiling water, cover the kettle, and let it steam 10 minutes. Remove the squash.
3. Mix sausage, onion and bread crumbs. Sprinkle each squash with salt and nutmeg. Fill centers with the sausage and bread mixture.
4. Place in the baking pan. Add 1/2 cup boiling water to the bottom of the pan. Bake 25 minutes.
