Quick Zucchini Parmesan
|Olive oil||1 Tablespoon|
|Onion/3 to 4 shallots||1⁄2 Small, finely chopped|
|Zucchini||1 Pound, sliced (3 Zucchini)|
|Dried oregano/Dried marjoram||1⁄2 Teaspoon|
|Freshly ground black pepper||To Taste|
|Grated parmesan cheese/Grated romano cheese||1⁄4 Cup (4 tbs)|
In saute pan, heat olive oil and butter.
Saute onion or shallots about 3 minutes or until wilted.
Add zucchini and cook, stirring frequently, about 4 minutes until barely tender.
Add lemon juice, oregano, salt, and pepper.
Serve garnished with cheese.
