Zucchini Squash Patties
|Grated zucchini||3 1⁄2 Cup (56 tbs)|
|Grated onion||2 Tablespoon|
|Parsley flakes||1 Tablespoon|
|Grated parmesan cheese||3 Tablespoon|
|Soft breadcrumbs||1 Cup (16 tbs)|
|Eggs||2 , well beaten|
|Fine dried breadcrumbs||1⁄2 Cup (8 tbs) (adjust quantity as needed)|
|Melted butter/Margarine||2 Tablespoon (adjust quantity as needed)|
Squeeze liquid out of zucchini with hands.
Combine zucchini, onion, parsley, cheese, 1 cup breadcrumbs, salt, pepper, and eggs.
Shape into patties and cover with dry breadcrumbs.
Place on a greased cookie sheet; brush with melted butter.
Bake at 350° for 30 to 40 minutes or until golden brown. (Patties can be browned in skillet in butter.)
