Zucchini Squash Patties

Ingredients
  Grated zucchini 3 1⁄2 Cup (56 tbs)
  Grated onion 2 Tablespoon
  Parsley flakes 1 Tablespoon
  Grated parmesan cheese 3 Tablespoon
  Soft breadcrumbs 1 Cup (16 tbs)
  Salt 3⁄4 Teaspoon
  Pepper 1⁄4 Teaspoon
  Eggs 2 , well beaten
  Fine dried breadcrumbs 1⁄2 Cup (8 tbs) (adjust quantity as needed)
  Melted butter/Margarine 2 Tablespoon (adjust quantity as needed)
Directions

Squeeze liquid out of zucchini with hands.
Combine zucchini, onion, parsley, cheese, 1 cup breadcrumbs, salt, pepper, and eggs.
Shape into patties and cover with dry breadcrumbs.
Place on a greased cookie sheet; brush with melted butter.
Bake at 350° for 30 to 40 minutes or until golden brown. (Patties can be browned in skillet in butter.)
