Silky Smooth Squash

Ingredients
  Buttercup squash 1 Pound, peeled and seeded (450 Gram)
  Oil 22 Milliliter (1 1/2 Tablespoons)
  Ginger slices 1 , shredded
  Black bean paste 2 Teaspoon (10 Milliliter)
  Salt 1⁄2 Teaspoon (2 Milliliter)
  Soy sauce 1 Teaspoon (5 Milliliter)
  Sugar 1 Teaspoon (5 Milliliter)
  Soup stock 125 Milliliter (1/2 Cup)
  Cornstarch slurry 3⁄4 Teaspoon (3 Milliliter)
Directions

1. Cut squash into 3 1/2" x 1 1/2" x 1 1/2" (1.5 cm x 4 cm x 4 cm) pieces.
2. Heat oil over medium-high heat in wok. Put in ginger stirring for 10-15 seconds. Put in black bean paste stirring another 10-15 seconds.
3. Add squash and stir-fry for 30 seconds.
4. Add remaining ingredients except cornstarch solution to wok and mix well. Cover and reduce heat to medium-low and simmer for 10-12 minutes until squash is tender.
