Squash Patties

Ingredients
  Cooked spaghetti squash 1 Cup (16 tbs)
  Shredded cheddar cheese 3⁄4 Ounce
  Chopped scallions 1⁄4 Cup (4 tbs) (Green Onions)
  Egg 1 Large, lightly beaten
  All purpose flour 2 Teaspoon
  Salt 1 Dash
  Freshly ground black pepper 1 Dash
Directions

1. In medium bowl, combine all ingredients. Shape mixture into 2 patties.
2. Spray medium nonstick skillet with nonstick cooking spray. Cook patties over medium heat until lightly browned, about 3 minutes. Turn patties over; cook until other side is lightly browned, about 3 minutes longer.
