Side Dish Recipe- Maple And Herb Roasted Acorn Squash Rings

This quick and easy side dish takes only minutes to prepare and everyone will be blown away by how good it is! Not only is it delicious but it's beautiful. My roasted acorn squash rings will be your go-to side dish recipes for Fall/Winter!

Ingredients

Acorn squash 2 , cut into rings as shown in the video
Maple syrup 2 Tablespoon
Melted butter 4 Tablespoon
Salt To Taste
Pepper To Taste
Red pepper flakes 1/4 Teaspoon
Chopped fresh rosemary 1 Teaspoon
Chopped fresh sage 1 Teaspoon
Chopped fresh thyme 1 Teaspoon
Pomegranate seeds 2 Tablespoon

Directions

GETTING READY:

Preheat oven at 425°F.

       

MAKING:                        

Place squash rings on baking tray.

In a small bowl, combine maple syrup, melted butter, salt, pepper, red pepper flakes, rosemary, sage, thyme and mix well.

Brush the mixture on both sides of squash rings.

Pop into oven and bake for 20 minutes (10 min/side).

Once done, sprinkle pomegranate seeds over it.
