Ingredients
  Flank steak 1 Pound
  Bean sprouts 2 Cup (32 tbs)
  Scallions 2
  Oil 1 Tablespoon
  Garlic 1⁄2 Clove (2.5 gm), crushed
  Ginger slice 1
  Salt 1 Teaspoon
  Pepper 1⁄8 Teaspoon
  Cornstarch 3 Tablespoon (Mixed With 1/4 Cup Cold Water)
Directions

Cut the steak against the grain into very thin pieces about 1 inch square.
Wash the bean sprouts and pick them over well.
Cut the scallions into 1 inch sections.
Heat a pan with the oil and add the garlic, ginger, salt and pepper.
When the garlic turns golden brown, remove and discard it.
Saute the meat for 1 minute and then add the bean sprouts and continue to saute for 1 minute more, stirring constantly.
Pour the thickening over the meat and when the sauce is smooth and thick, sprinkle with the scallions and serve very hot.
