2. Heat a large frying pan or wok over high heat and add oil.
3. When the oil starts bubbling add ginger and garlic. With a wide spatula stir quickly for 30 seconds.
4. Add sprouts, 1 tablespoon water, sugar, and salt.
5. Stir with spatula for 2 minutes.
6. Or after adding bean sprouts to the pan, cover and cook. Uncovering often to stir and cook for 1 to 2 minutes.
7. Transfer into a warm serving dish.
8. Garnish with chopped parsley or sliced green onion.
