Brussels Sprouts With Yam Frill
|Brown sugar||1⁄2 Cup (8 tbs)|
|Orange juice||3⁄4 Cup (12 tbs)|
|Orange peel||3 Tablespoon|
|Frozen brussels sprouts||20 Ounce|
|White pepper||1⁄4 Teaspoon|
1)In a bowl, mix sugar, 2 tablespoons butter, 1 /4 cup orange juice, 2 tablespoons orange peel, 1/4 teaspoon nutmeg and 1/8 teaspoon allspice and yams.
2)Whip the mixture until light and fluffy.
3)Now, in a pan, heat it up to serving temperature and keep hot.
4)In a saucepan, cook Brussels sprouts as per package directions and drain.
5)In a pan, heat remaining butter, orange juice, orange peel, nutmeg, allspice and white pepper and add Brussels.
6)Toss to coat nicely and put into serving dish.
7)Decorate the Brussels with a border or frill of yams and serve immediately.

Toss gently with remaining butter, orange juice, orange peel, nutmeg, allspice and white pepper.
Turn onto warm serving dish; circle with yam mixture.
