|Brussels sprouts||1 Pound|
|Onion||1 Medium, chopped|
|Tomatoes||2 Small, seeded and diced|
|Sour cream||1⁄4 Cup (4 tbs) (Adjust Quantity As Needed)|
Prepare and boil or steam sprouts.
Meanwhile, cook bacon in a wide frying pan over medium heat until crisp.
Lift out, drain, crumble, and set aside.
Discard all but 2 tablespoons drippings.
Add butter and onion to drippings and cook, stirring, until onion is soft.
Stir in tomatoes, bacon, and sprouts; heat through, then season to taste with salt and pepper.
Pass sour cream at the table to spoon over individual portions.
