Bean Sprout Salad

Ingredients
  Soybean sprouts 1 Pound (450 Gram)
  Light soy sauce 45 Milliliter (3 Tablespoon)
  White vinegar 15 Milliliter (1 Tablespoon)
  Sugar 1 Teaspoon (5 Milliliter)
  Sesame oil 1⁄2 Teaspoon (2.5 Milliliter)
  Snow peas 1⁄2 Pound (225 Gram)
  Bean curd cake 1 , cut into julienne strips
  Red pepper 1⁄4 , cut into julienne strips
Directions

1 Blanch soybean sprouts in boiling water for 1 minute. Refresh in cold water and drain well.
2 Combine soy sauce, vinegar, sugar and sesame oil in a bowl, add soybean sprouts and snow peas. Toss to coat with dressing. Cover and chill 20 minutes.
3 Arrange salad on a platter. Garnish with bean curd and red pepper.
