Bean Sprout Omelette
|Butter||1 Ounce (30 Gram)|
|Grated fresh ginger||2 Tablespoon|
|Bean sprouts||4 Tablespoon|
|Chives||4 , finely chopped|
|Freshly ground black pepper||To Taste|
1. To make filling, melt butter in a small frypan. Add ginger, bean sprouts and chives and cook for 1 minute. Remove from pan and keep warm.
2. To make omelette, melt butter in a small frypan. Lightly whisk together eggs and water and season with pepper. Pour into pan and cook over medium heat. Continually draw the edge of the omelette in with a fork during cooking until no liquid remains and the omelette is lightly set.
3. Sprinkle the bean sprout mixture over the omelette and fold in half. Slip onto a plate and serve immediately.
