Prawns With Bean Sprouts

Ingredients
  Shelled prawns 1 Pound
  Dry sherry 4 Fluid Ounce
  Oil 1⁄4 Pint
  Salt 1 1⁄2 Teaspoon
  Bean sprouts 1 Pound
  Light soy sauce 4 1⁄2 Tablespoon
  Sugar 1 1⁄2 Teaspoon
Directions

Soak the prawns in the sherry for 1 1/2 hours. Drain. Heat the oil in a large saucepan or frying pan. Add the prawns and salt and fry for 2 minutes. Add the bean sprouts and fry for 2 minutes. Add the soy sauce and sugar and mix well. Heat thoroughly. Serve in warmed bowls.
