Pimiento Cheese Spread
|Shredded sharp cheddar cheese||2 Cup (32 tbs)|
|Reduced calorie mayonnaise||1⁄2 Cup (8 tbs)|
|Grated white onion||1⁄4 Cup (4 tbs)|
|Ground red cayenne pepper||1⁄4 Teaspoon|
|Pimientos||4 Ounce, drained well and chopped (1 jar)|
1. ln a medium-size bowl, with an electric mixer at low speed, blend the cheese, mayonnaise, onion, red pepper, and salt.
2. Increase the speed to high and beat for 2 minutes or until light and creamy, then fold the pimientos. Spoon into a small serving bowl, cover with plastic wrap, and chill until serving time, up to 6 hours if you wish. Serve with an assortment of crackers.
