Salmon Appetizer Spread

Ingredients
  Small onion 1⁄4 Cup (4 tbs), chopped
  Butter/Margarine 1 Tablespoon
  Cream cheese 8 Ounce (1 Package)
  Shredded cheddar cheese 8 Ounce (2 Cups)
  Canned salmon 7 3⁄4 Ounce, drained, flaked (1 Can)
  Chopped parsley 1⁄4 Cup (4 tbs)
  Liquid red pepper seasoning 1 Dash
  Thin pumpernickel bread slices 1 Cup (16 tbs)
Directions

1. Microwave the onion and the butter or margarine in a small microwave-safe bowl, covered, on Full Power for 30 to 45 seconds or until the onion is tender.
2. Microwave the cream cheese in a large microwave-safe bowl on Half Power for 1 to 1 1/2 minutes or until softened. Stir in the onion-butter mixture, blending well.
3. Add the shredded Cheddar cheese, salmon, 1/4 cup chopped parsley and the liquid-red pepper seasoning, blending well. Shape the mixture into a ball. Wrap in plastic wrap and chill for at least 2 hours.
4. Roll the bottom of the ball in additional chopped parsley, if you wish.
