Date Carrot Spread
|Coarsely chopped scraped carrot||1 Cup (16 tbs), or diced (3 In Number)|
|Chopped pitted dates||1 Cup (16 tbs)|
|Orange juice||2 Tablespoon|
|Grated orange peel||1 Teaspoon|
|Buttered toast/Dark nut bread||4|
|Cream cheese||3 Ounce|
|Pickle relish||2 Tablespoon|
Grind together or finely chop in blender or food processor the diced carrots and chopped dates.
Add orange juice and orange peel.
Cover and store in refrigerator.
Spread on buttered toast or thinly sliced dark nut bread, with cream cheese, if you like.
Vary for sandwiches with a little mayonnaise and pickle relish.
