Herbed Cheese Spread
|Garlic||1 Clove (5 gm)|
|Low fat cottage cheese||8 Ounce (1 % Milk Fat)|
|Parsley leaves||1⁄4 Cup (4 tbs)|
|Dried basil||1⁄4 Teaspoon, crumbled|
|Black pepper||1⁄8 Teaspoon|
|Snipped chives/Green onion tops||1 1⁄2 Tablespoon|
1 In a small saucepan of boiling water, cook the garlic for 1 minute. Drainoffthewaterandtransferthegarlictoa food processor or blender.
2 Add the cottage cheese, parsley, basil, pepper, and chives to the food processor or blender and whirl for 30 seconds or until smooth. Coverand refrigerate for 2 hours to letthe flavors mellow. Will keep, covered and refrigerated, for up to 10 days.
