Garlic and Sun Dried Tomato Spread's picture
  Dried navy beans/Great northern beans 1 Cup (16 tbs), sorted
  Garlic head 1 , separated into cloves and peeled
  Chopped sun dried tomatoes 1⁄2 Cup (8 tbs) (Not Packed In Oil)
  Water 1⁄2 Cup (8 tbs)
  Olive oil 1 Tablespoon
  Salt 1⁄4 Teaspoon
  Ground white pepper 1⁄8 Teaspoon

1. Place the beans in a large pot, add 4 cups of water, and soak for at least 4 hours. Drain off the water, and add 2 cups of fresh water and the whole garlic cloves. Cover and simmer over low heat for 1 1/2 hours, or until the beans are very tender and all of the liquid has been absorbed. (Periodically check the pot during cooking, and add more water if needed.)
2. Add the tomatoes and water to the pot Cover and simmer for 5 minutes. Cool slightly, and place in a food processor with the remaining ingredients. Process until smooth.
