Spinach and Yogurt

Ingredients
  Olive oil 3 Tablespoon
  Onion 1 Small, finely chopped
  Coarsely chopped 1 Pound, trimmed, washed, coarsely chopped, cooked and drained
  Plain yogurt 8 Ounce (1 Container)
  Garlic 1 Clove (5 gm), crushed
  Crushed dried mint 1⁄2 Teaspoon
  Salt To Taste
  Freshly ground black pepper To Taste
  Finely chopped walnuts 2 Tablespoon, toasted
Directions

Heat oil over medium heat in heavy skillet.
Add onion; saute until golden, stirring frequently.
Add spinach and saute a few minutes.
Remove from heat.
Combine yogurt, garlic, mint, salt and pepper in large bowl until well blended.
Gradu-ally stir in spinach mixture; blend thoroughly.
Taste and adjust seasoning.
Transfer to serving bowl, cover and chill 2 hours.
Serve sprinkled with walnuts.
