Spinach and Yogurt
|Olive oil||3 Tablespoon|
|Onion||1 Small, finely chopped|
|Coarsely chopped||1 Pound, trimmed, washed, coarsely chopped, cooked and drained|
|Plain yogurt||8 Ounce (1 Container)|
|Garlic||1 Clove (5 gm), crushed|
|Crushed dried mint||1⁄2 Teaspoon|
|Freshly ground black pepper||To Taste|
|Finely chopped walnuts||2 Tablespoon, toasted|
Heat oil over medium heat in heavy skillet.
Add onion; saute until golden, stirring frequently.
Add spinach and saute a few minutes.
Remove from heat.
Combine yogurt, garlic, mint, salt and pepper in large bowl until well blended.
Gradu-ally stir in spinach mixture; blend thoroughly.
Taste and adjust seasoning.
Transfer to serving bowl, cover and chill 2 hours.
Serve sprinkled with walnuts.
