Spinach With Pine Nuts

  Spinach leaves 2 Pound (1 Kg)
  Freshly grated nutmeg To Taste
  Sunflower oil 1 Tablespoon
  Garlic 1 Clove (5 gm), finely chopped
  Pine nuts 2 Tablespoon
  Raisins 2 Tablespoon
  Thick greek yogurt 2 Tablespoon
  Salt To Taste
  Pepper To Taste

1 Wash the spinach in several changes of cold water, picking out any discoloured leaves. Place the spinach in a saucepan with just the water clinging to the leaves after washing. Season with salt, pepper and nutmeg to taste and heat gently until the spinach leaves start to wilt. Shake the pan, cover and cook gently for 3-5 minutes until the spinach is tender.
2 Drain the spinach in a colander, pressing out as much liquid as possible. Chop the leaves using the edge of a saucer.
3 Heat the oil in a frying pan. Add the garlic, pine nuts and raisins and fry gently for about 2 minutes until the pine nuts are pale golden. Add the spinach, stir well and heat through. Stir in the yogurt, then taste and add more seasoning if necessary. Serve immediately
