Spiced Spinach Saute
|Ground pepper||1 Dash|
|Onion||1⁄4 Cup (4 tbs), diced|
|Garlic||1⁄2 Clove (2.5 gm), minced|
Wash spinach thoroughly and drain; remove and discard stems and coarsely chop leaves.
In 9- or 10-inch nonstick skillet, over high heat and using only the water that clings to spinach leaves after washing, cook spinach, covered, until wilted; remove from pan and set aside.
In same skillet heat margarine until bubbly and hot; add onion and garlic and saute until onion is translucent.
Add spinach and stir to combine; season and saute until thoroughly heated.
