Spinach With Yogurt
|Spinach||3 Pound, trimmed, coarsely chopped and washed|
|Onion||1 Medium, minced|
|Garlic||1 Clove (5 gm), minced|
|Olive oil||2 Tablespoon|
|Freshly ground pepper||To Taste|
|Pignoli nuts||4 Tablespoon|
|Plain yogurt||2 Cup (32 tbs) (Adjust As Per Taste)|
|Plain yoghurt||2 Cup (32 tbs)|
|Minced fresh mint/2 teaspoons dried mint||2 Tablespoon|
Combine the spinach, onion and garlic in a saucepan.
Cook covered over medium heat, without additional water, for 5 minutes, tossing the pan frequently to prevent sticking.
Drain off any moisture.
Add the olive oil.
Cook, stirring constantly, for 3 more minutes.
Season with salt and pepper.
Mix in the pignoli nuts.
Remove from heat and stir in the yoghurt.
Turn into a serving dish and sprinkle with the mint.
