Spinach With Yogurt

Ingredients
  Spinach 3 Pound, trimmed, coarsely chopped and washed
  Onion 1 Medium, minced
  Garlic 1 Clove (5 gm), minced
  Olive oil 2 Tablespoon
  Salt To Taste
  Freshly ground pepper To Taste
  Pignoli nuts 4 Tablespoon
  Plain yogurt 2 Cup (32 tbs) (Adjust As Per Taste)
  Plain yoghurt 2 Cup (32 tbs)
  Minced fresh mint/2 teaspoons dried mint 2 Tablespoon
Directions

Combine the spinach, onion and garlic in a saucepan.
Cook covered over medium heat, without additional water, for 5 minutes, tossing the pan frequently to prevent sticking.
Drain off any moisture.
Add the olive oil.
Cook, stirring constantly, for 3 more minutes.
Season with salt and pepper.
Mix in the pignoli nuts.
Remove from heat and stir in the yoghurt.
Turn into a serving dish and sprinkle with the mint.
