Savory Creamed Spinach
|Frozen chopped spinach||10 Ounce (1 Package)|
|Evaporated skim milk||3⁄4 Cup (12 tbs)|
|Finely chopped onions||1⁄2 Cup (8 tbs)|
|Dried basil||1⁄4 Teaspoon|
|Dried oregano||1⁄4 Teaspoon|
|Shredded reduced fat monterey jack cheese||3 Ounce (3/4 Cup)|
Cook the spinach according to the directions on the package.
Drain the spinach well and set it aside.
In a small bowl, stir together the milk and cornstarch.
Set the mixture aside.
Lightly spray an unheated medium skillet with olive oil no-stick spray.
Add the onions, basil, oregano and nutmeg.
Cook and stir over medium heat until tender.
Stir in the milk mixture.
Cook and stir until thickened and bubbly.
Add the cheese, then cook and stir until melted.
Stir in the spinach and heat through.
