Pasta With Spinach, Bacon And Mushrooms
|Spinach leaves||6 Cup (96 tbs)|
|Sliced mushrooms||1 1⁄2 Cup (24 tbs)|
|Chopped onion||1⁄2 Cup (8 tbs)|
|Wide noodles||4 1⁄2 Ounce, cooked, drained|
|Cider vinegar||2 Tablespoon|
|Vegetable oil||2 Teaspoon|
|Dijon mustard||1 Tablespoon|
|Cracked black pepper||1⁄4 Teaspoon|
1. Thoroughly wash spinach; drain and cut into bite-sized pieces. Set aside.
2. In a 2 1/2-quart casserole, microwave bacon on High 3-4 minutes, until crisp; remove to paper towel to drain; crumble. Wipe out casserole; add mushrooms and onion. Microwave, covered, on High 1-2 minutes, until softened. Add spinach; microwave, covered, 45 seconds-1 1/2 minutes, until spinach wilts.
3. Add noodles, vinegar, oil, mustard and pepper to casserole; toss gently to combine. Sprinkle with bacon.
