Merchant's Spinach Puree
|Fresh spinach/8 ounces frounceen spinach, defrosted||1 1⁄2 Pound, washed (Trimmed)|
|Dijon mustard||1 Tablespoon|
Add the spinach to a pan of boiling water and cook, stirring occasionally, until it is tender, 1-3 minutes.
Drain the spinach through a colander, pressing the greens with the back of a spoon to get rid of excess moisture.
Place the spinach, scallions, butter, salt, and mustard in a food processor.
Puree the mixture and serve hot.
