|Fresh spinach||1 1⁄2 Pound|
Wash spinach thoroughly.
Drain and pack into 3 quart Saucepan.
Cover and place over medium heat until valve begins to click (3 to 5 minutes).
Then reduce the heat to low and cook until tenderâ€”about 15 minutes.
Garnish with hard-cooked eggs and wedges of lemon.
