Bring 4 cups water to a boil; add spinach.
Bring to a boil again; turn off heat.
Let spinach stand for 5 minutes; drain well.
Arrange spinach evenly on large platter; refrigerate.
Cut spinach into 2-inch sections.
Combine all remaining ingredients; bring to a boil.
Reduce heat; simmer for 5 minutes.
Pour sauce over spinach.
