Wok Fried Tofu and Spinach

Ingredients
  Vegetable oil 2 Tablespoon (Rapeseed Oil)
  Silken tofu 700 Gram, diced (Or Any Tofu)
  Fresh spinach 150 Gram
  Garlic 1 Clove (5 gm), crushed
  Lime juice/Lemon juice 1 Tablespoon
  Reduced salt soy sauce 4 Tablespoon
  Bird's eye chili 1 Small, finely chopped
  Fresh ginger 1 Inch, grated
  Lemongrass stalk 1 , peeled and finely chopped
  Water 4 Tablespoon
  Fresh coriander 1 Cup (16 tbs) (Handful)
Directions

Heat the oil in a wok or a large pan.
Add the tofu pieces and fry on a medium heat for 1 minute, then turn and fry for a further minute.
Add the spinach, turning the heat down to low.
Add the garlic, lime or lemon juice, soy sauce, chilli, ginger and lemongrass and cook for 1 minute.
Add the water and cook for 1 more minute or so, turning all the time.
Serve garnished with fresh coriander.
