Wok Fried Tofu and Spinach
|Vegetable oil||2 Tablespoon (Rapeseed Oil)|
|Silken tofu||700 Gram, diced (Or Any Tofu)|
|Fresh spinach||150 Gram|
|Garlic||1 Clove (5 gm), crushed|
|Lime juice/Lemon juice||1 Tablespoon|
|Reduced salt soy sauce||4 Tablespoon|
|Bird's eye chili||1 Small, finely chopped|
|Fresh ginger||1 Inch, grated|
|Lemongrass stalk||1 , peeled and finely chopped|
|Fresh coriander||1 Cup (16 tbs) (Handful)|
Heat the oil in a wok or a large pan.
Add the tofu pieces and fry on a medium heat for 1 minute, then turn and fry for a further minute.
Add the spinach, turning the heat down to low.
Add the garlic, lime or lemon juice, soy sauce, chilli, ginger and lemongrass and cook for 1 minute.
Add the water and cook for 1 more minute or so, turning all the time.
Serve garnished with fresh coriander.
