Spinach with Olives, Raisins, and Pine Nuts
|Fresh spinach||1 Pound, well-washed, tough stems removed|
|Garlic||1 Clove (5 gm), mashed|
|Olive oil||2 Tablespoon|
|Pitted sliced kalamata olives||2 Tablespoon|
|Golden raisins||2 Tablespoon|
|Pine nuts||2 Tablespoon|
Steam the spinach in just the water that clings to the leaves after washing, adding the mashed garlic to the pan.
Stir often; add more water if needed.
Drain the spinach and remove the garlic.
Season with salt and pepper to your taste.
(You can omit salt entirely.) Heat the oil in a large skillet; cook the olives, raisins, and pine nuts until the nuts are golden; don't let them brown.
Add the cooked spinach and saute 1 minute before serving.
