Stir Fried Spinach
|Fresh spinach/Other leafy green vegetable||1 Pound (Loose)|
|Vegetable oil||1 Tablespoon (Acceptable)|
Rinse spinach thoroughly, remove stems and drain well.
Heat oil in a skillet or wok over medium-high heat.
Add spinach and stir, turning over leaves several times until they are well coated.
Cover and cook 1 minute.
Uncover and cook, stirring constantly, another 30 seconds, or until spinach is wilted.
Do not overcook.
