Sweet And Pungent Spinach

Ingredients
  Water 2 Tablespoon
  Vinegar 2 Tablespoon
  Sugar 1 Tablespoon
  Cooking oil 1 Tablespoon
  Coarsely chopped peanuts 1⁄4 Cup (4 tbs)
  Small fresh spinach leaves 1 Pound
Directions

Combine water, vinegar, and sugar.
Set aside.
Preheat a wok or large skillet over high heat; add cooking oil.
Stir-fry peanuts in hot oil for 1 to 2 minutes or just till lightly toasted.
Remove peanuts.
Add spinach to wok; stir-fry 2 minutes or till crisp-tender.
Stir vinegar mixture; stir into spinach.
Add peanuts; heat through, tossing gently to mix.
