Pot Stickers Spinach Variation

Ingredients
  Boiling water 1 Cup (16 tbs)
  Dried shiitake mushrooms 7⁄8 Ounce (1 Package)
  Cooked long grain rice 1⁄2 Cup (8 tbs)
  Chopped canned water chestnuts 1⁄3 Cup (5.33 tbs) (Finely Chopped)
  Minced green onions 1⁄3 Cup (5.33 tbs)
  Cornstarch 1 Tablespoon
  Peeled minced ginger 1 Tablespoon
  Dark sesame oil 1 Teaspoon
  Frozen chopped spinach 10 Ounce, thawed, drained, and squeezed dry (1 Package)
  Egg white 1
  Garlic 1 Clove (5 gm), minced
  Wonton wrappers 30
Directions

Combine boiling water and mushrooms in a bowl; cover and let stand 30 minutes.
Drain; discard mushroom stems, and mince caps.
Combine mushroom caps, rice, and next 8 ingredients, and stir well.
Fill won ton wrappers with spinach mixture, preparing wrappers and cooking per previous directions.
