Sweet Sour Spinach

This Sweet Sour Spinach tastes incredible ! Try this bacon and greens casserole seasoned with vinegar and sugar for your next meal !Tell me if you share my passion for this Sweet Sour Spinach.
  Spinach 1 Pound, washed and chopped
  Bacon slices 2 , cut in small pieces
  All purpose flour 1 Teaspoon
  Sugar 1 Teaspoon
  Half and half 1⁄4 Cup (4 tbs)
  Cider vinegar 1 Tablespoon

1. Cook spinach. Drain.
2. Put bacon into a 1 1/2-quart glass casserole. Cover with a paper towel. Cook in microwave oven 1 1/2 minutes at High, or until bacon is crisp.
3. Pour off all but 1 tablespoon fat. Add flour to fat and blend. Stir in sugar and half-and-half. Cook uncovered in microwave oven 1 1/2 minutes at High, or until thickened; stir once.
4. Add vinegar to mixture in casserole; stir. Add chopped spinach and mix well. Cover with waxed paper. Heat in microwave oven to serving temperature (about 2 minutes at High).
