Spinach & Tofu Fry

Ingredients
  Firm tofu 500 Gram (0.5 Pounds bean curd)
  Fresh spinach/Frozen spinach 1 Bunch (100 gm), chopped
  Cumin seeds 1⁄2 Teaspoon
  Onions 1⁄4 Cup (4 tbs), chopped
  Turmeric powder 2 Pinch
  Salt To Taste
  Chilly powder To Taste
Directions

Cut Tofu in to small cubes & fry them in 1 tbs oil until light brown. Keep aside.

Heat 1 tbs oil in a skillet. Add cumin seeds, onions & turmeric powder. Saute until onions turn brown.

Add chopped spinach, salt & chilly powder. Mix well. Cover with lid.

Remove lid after 2 minutes & continue cooking until water evaporates from the spinach.

Add fried tofu cubes. Mix well & cook for another 1 minute.

Serve Hot with Rotis or any Indian Bread.
