Stir Fried Baby Squash And Spinach

Ingredients
  Spinach leaves 8 , torn into bite size pieces
  Oil 7 Tablespoon
  Tarragon 2 Tablespoon
  Baby yellow squash 375 Gram, cut into quarters and sliced
Directions

Bring a medium saucepan of water to the boil.
Add the spinach and cook for 1 minute, refresh under cold water, drain well and set aside.
Heat the oil and vinegar in a large frying pan.
Add the squash and cook, stirring constantly, for 2 minutes.
Add spinach and cook for a further 1 minute.
