Gourmet Baked Spinach

Ingredients
  Minced onions 2 Tablespoon
  Butter/Margarine 3 Tablespoon
  All purpose flour 3 Tablespoon
  Milk 2 Cup (32 tbs)
  Frozen chopped spinach 20 Ounce, cooked, drained (2 Packages, 10 Ounces Each)
  Hard-cooked eggs 3 , finely chopped
  Salt 2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Ground nutmeg 1⁄8 Teaspoon
  Cornflake crumbs 1⁄2 Cup (8 tbs)
  Shredded cheddar cheese 1⁄2 Cup (8 tbs)
  Butter/Margarine 2 Tablespoon, melted
  Paprika To Taste
Directions

Cook onion in butter or margarine until transparent; stir in flour.
Add milk gradually, stirring constantly.
Cook until thickened, stirring occasionally.
Fold in spinach and eggs; season with salt, pepper, and nutmeg.
Spread in greased shallow baking dish.
Combine cornflake crumbs with cheddar cheese and butter or margarine; sprinkle over spinach.
Sprinkle with paprika.
Bake at 375° about 20 minutes, or until lightly browned.
