Appetizing Creamed Spinach
|Chopped onion||2 Tablespoon|
|Bacon drippings||2 Tablespoon (Hot)|
|All purpose flour||2 Tablespoon|
|Half and half||1 Cup (16 tbs)|
|Cooked spinach||4 Cup (64 tbs), chopped|
|Ground black pepper||1 Dash|
|Ground nutmeg||1⁄4 Teaspoon|
Saute onion in hot bacon drippings until golden brown.
Blend in flour.
Add half-and-half and stir with a wire whisk or fork until thickened.
Add spinach and seasonings, and blend thoroughly.
